Mexican oven dish:
Cut 500 g of potatoes into small cubes and boil them until soft. Fry 1 onion and 2 cloves of garlic in a pan. Add 500 g of minced beef and fry until browned. Add 1 can black beans (drained and rinsed), 1 can corn (drained), 1 red bell pepper (diced), 1 tsp cumin, 1/2 tsp chili powder, 1/2 tsp paprika, and salt and pepper. Mix everything together well. Add the potatoes and mix again. Spoon the mixture into an oven dish and sprinkle with grated cheese. Bake in a preheated oven at 180 degrees for 20 minutes.
Cauliflower cheese casserole:
Boil 1 large cauliflower cut into florets until soft. Mix 200 g grated cheddar cheese, 100 g cream cheese, 1/2 cup milk, 2 tablespoons butter, 1 teaspoon mustard powder and salt and pepper in a bowl. Mix the cooked cauliflower with the cheese sauce and scoop the mixture into an oven dish. Bake in a preheated oven at 180 degrees for 20-25 minutes.
Spinach lasagne:
Fry 1 onion and 2 cloves of garlic in a pan. Add 500 g of minced beef and fry until browned. Add 1 can diced tomatoes, 1 can tomato paste, 1/2 cup red wine, 1 teaspoon dried oregano, salt and pepper and mix well. Simmer the mixture for 20 minutes. Cook 12 lasagna sheets according to package directions. Add 500 g frozen spinach (thawed and drained) to the minced meat mixture. Spoon a layer of the minced meat mixture into an oven dish, place 4 lasagna sheets on top and repeat these layers two more times. Finish with a layer of minced meat mixture and sprinkle with grated cheese. Bake in a preheated oven at 180 degrees for 30-35 minutes.
Chicken pesto casserole:
Cut 500 g of potatoes into small cubes and boil them until soft. Fry 500 g of chicken fillet cut into cubes in a pan. Add 1 jar of green pesto and mix well. Add the boiled potatoes and mix again. Spoon the mixture into an oven dish and sprinkle with grated cheese. Bake in a preheated oven at 180 degrees for 20 minutes.
